Ingredients
  

  • 1 Hard-boiled egg, chopped
  • 1 Persian cucumber, peeled and diced leave peel, if you prefer
  • 1 Medium Carrot, peeled and shredded
  • Corn kernels from one cooked ear of corn Alternatively, 1/2 cup of thawed frozen corn
  • ½ Avocado, diced
  • 1 Medium Tomato, chopped or 10 cherry tomatoes, sliced into quarters
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 Pinch Salt and Pepper, to taste

Instructions
 

Prepare Ingredients:

  • Peel and chop the hard-boiled eggs into bite size pieces.
  • Dice the Persian cucumber and tomato.
  • Shred the carrot using a grater or julienne peeler.
  • Remove corn kernels from already cooked ear of corn.
  • Dice half of an avocado and set aside.

Combine Ingredients:

  • In a large salad bowl, combine the chopped egg, cucumber, shredded carrot, corn, tomato, and avocado.

Season and Dress:

  • Drizzle olive oil over the mixture.
  • Sprinkle with salt and pepper to taste.

Toss and Serve:

  • Gently toss the ingredients together to coat them evenly with the olive oil and seasoning.
  • Serve immediately and enjoy!

Optional:

  • Serve on a bed of mixed greens, chopped romaine lettuce, or quinoa. Add a squeeze of fresh lemon juice for extra brightness.
