Ingredients
- 1 Hard-boiled egg, chopped
- 1 Persian cucumber, peeled and diced leave peel, if you prefer
- 1 Medium Carrot, peeled and shredded
- Corn kernels from one cooked ear of corn Alternatively, 1/2 cup of thawed frozen corn
- ½ Avocado, diced
- 1 Medium Tomato, chopped or 10 cherry tomatoes, sliced into quarters

Instructions
Prepare Ingredients:
- Peel and chop the hard-boiled eggs into bite size pieces.
- Dice the Persian cucumber and tomato.
- Shred the carrot using a grater or julienne peeler.
- Remove corn kernels from already cooked ear of corn.
- Dice half of an avocado and set aside.
