Kodiak Apple Cinnamon Protein Muffins
Ingredients You’ll Need
• Kodiak Power Cakes Mix (Buttermilk or flavor of your choice)
• 2% Greek Yogurt (I used FAGE Total)
• Diced Apple (I peel mine)
• Brown Sugar (or sub maple syrup, honey, or coconut sugar)
• Cinnamon + Vanilla Extract
• Egg + Milk (I used 2% milk)

• Add chopped almonds or walnuts for extra texture.

Kodiak Apple Cinnamon Protein Muffins
Equipment
- mixing bowl, muffin tin
Ingredients
- 2 cups Kodiak Power Cakes Mix
- ½ cup Greek Yogurt I prefer Fage 2% Greek Yogurt
- ¾ cup Milk of choice (dairy or non-dairy)
- ¼ cup Brown sugar, packed
- ¼ cup Butter, melted
- 1 Egg
- 1 tsp. Cinnamon
- 1 tsp. Vanilla extract
- 1 cup Cosmic Crisp apple, finely diced or chopped Or 1 medium apple of your choice
Instructions
- Preheat oven to 350 degrees F.
- Line muffin tin with muffin baking cup liners, or lightly grease.
- In a mixing bowl, whisk together the Greek yogurt, milk, brown sugar, melted butter, egg, vanilla extract, and cinnamon.
- Stir in the 2 cups of Kodiak Power Cakes Mix until just combined.
- Fold in chopped apple bits.
- Spoon muffin batter into greased or lined muffin cups, filling each about 3/4 full.
- Bake for 15-18 minutes, depending on your oven and altitude. The muffins are done when pierced with a toothpick that comes out clean (no muffin batter). Enjoy!
Notes
- try adding 1/2 cup chopped walnuts for crunch
- For added sweetness, drizzle honey over the top
- add 2 teaspoons of cinnamon instead of one, for extra cinnamon flavor
