Kodiak Apple Cinnamon Protein Muffins

These cinnamon apple protein muffins are lightly sweet, protein-packed, and are made with Kodiak Power Cakes mix, Greek yogurt, real apple bits, and a dash of cinnamon. They're healthier twist on classic muffins. Lower in sugar, higher in protein, and perfect for breakfast, snacks, or lunchboxes. Quick to make, freezer-friendly, and a staple for when you are on the go!

Ingredients
  

  • 2 cups Kodiak Power Cakes Mix
  • ½ cup Greek Yogurt I prefer Fage 2% Greek Yogurt
  • ¾ cup Milk of choice (dairy or non-dairy)
  • ¼ cup Brown sugar, packed
  • ¼ cup Butter, melted
  • 1 Egg
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla extract
  • 1 cup Cosmic Crisp apple, finely diced or chopped Or 1 medium apple of your choice

Instructions
 

  • Preheat oven to 350 degrees F.
  • Line muffin tin with muffin baking cup liners, or lightly grease.
  • In a mixing bowl, whisk together the Greek yogurt, milk, brown sugar, melted butter, egg, vanilla extract, and cinnamon.
  • Stir in the 2 cups of Kodiak Power Cakes Mix until just combined.
  • Fold in chopped apple bits.
  • Spoon muffin batter into greased or lined muffin cups, filling each about 3/4 full.
  • Bake for 15-18 minutes, depending on your oven and altitude. The muffins are done when pierced with a toothpick that comes out clean (no muffin batter). Enjoy!

Notes

Optional additions:
  • try adding 1/2 cup chopped walnuts for crunch
  • For added sweetness, drizzle honey over the top
  • add 2 teaspoons of cinnamon instead of one, for extra cinnamon flavor
