Tuna and Pomegranate Vitality Bowl

This 3-ingredient Tuna and Pomegranate Vitality bowl can be made in under 5 minutes! It is high in protein and packed with antioxidants from the beautiful pomegranate. This combination came to me one day when I was thinking about a chicken salad recipe (think chicken salad with grapes). It is incredibly simple to prepare and is one of those recipes that you can feel good about eating. I hope you enjoy it as much as I do!


Make it your own:

– Swap the tuna for shredded rotisserie chicken or chickpeas

– Use quinoa, couscous, romaine or butter lettuce for your base

-Add avocado or nuts for added crunch and texture

-Drizzle with lemon-tahini dressing or olive oil and balsamic glaze

Simple yet flavorful, this 3-ingredient Tuna and Pomegranate Vitality Bowl is a unique blend of savory and sweet; perfect for a quick and refreshing lunch. It is a nutrient-packed dish high in protein and antioxidants, that tastes both light and indulgent, with a mixture of flaky tuna, a bit of mayonnaise to create the creamy texture, and pomegranate arils for sweetness and a beautiful pop of color.

Ingredients
  

  • 5 oz. Can of Wild Yellowfin tuna packed in water, drained or your tuna preference
  • ½ 8oz Container of fresh pomegranate arils or ½ cup arils removed from a pomegranate fruit
  • 1 Tablespoon Mayonnaise

Instructions
 

  • Drain one 5oz can of tuna. Place tuna in a salad bowl, and flake with a fork.
  • Add 1 tablespoon of mayonnaise and mix until combined with the tuna.
  • Gently fold in the pomegranate arils (also known as seeds), until combined with the tuna and mayo mixture.

*Pomegranate arils: this is the technical name for the seeds. If you have fresh pomegranate fruit, and don’t mind the process of removing them from the fruit, that’s great too. When I don’t have much time, I will buy a pack of the 8oz. cups (usually from Costco), so I can easily throw this dish together in 5 minutes. I’ve used an entire 8oz. cup of arils for this recipe, and that was delicious too. Depends on the ratio of sweet and savory you are craving.
*Tuna: I usually use the Safe Catch brand of tuna (wild yellowfin). Because I eat a lot of tuna, I like the fact that the mercury levels are checked for this specific brand. Any tuna packed in water will taste great though!
