Green Goddess Tuna Vitality Bowl

This Green Goddess Vitality Bowl is a fresh, flavorful, and protein-packed meal perfect for lunch or dinner. It features wild yellowfin tuna, complimented by shredded carrots, crisp Persian cucumbers, avocado, sweet cherry tomatoes, chopped baby spinach and red onion. A small dollop of mayonnaise and a drizzle of Green Goddess Dressing ties it all together, and a sprinkle of salt and pepper enhances it's natural goodness. Simple, delicious, and loaded with nutrients!

Ingredients
  

  • 5 oz. Wild Yellowfin Tuna can, drained (or any tuna you prefer)
  • ¼ cup Shredded Carrots or one small/medium carrot, shredded
  • ½ cup Baby Spinach, chopped
  • 1 Persian cucumber, peeled and diced leave on peel if you prefer
  • ¼ avocado, diced
  • 10 Cherry tomatoes, quartered
  • cup Red onion, finely chopped
  • 1 Tablespoon Mayonnaise
  • 2 Tablespoons Green Goddess Salad Dressing

Instructions
 

Prepare the Base:

  • In a large mixing bowl, add drained tuna and flake with a fork. Mix the tuna with mayonnaise, until combined.

Assemble the Bowl:

  • To the large mixing bowl with prepared tuna, add in the chopped baby spinach, shredded carrots, diced cucumbers, quartered cherry tomatoes, and finely chopped red onion.

Top and Season:

  • Add diced avocado on top, season with salt and pepper to taste (start with a pinch or a couple grinds of each), and drizzle on the Green Goddess Dressing.
  • Gently mix all of the ingredients together. You can eat immediately, or chill for 10-15 minutes in the refrigerator. Enjoy!

Notes

The great thing about Vitality Bowls, are that they are completely customizable to your preferences and nutrition needs. Below are some of my preferences, however, if you use a different brand or type, it won’t alter the flavor much, if at all.
Protein Variation Ideas: Garbanzo beans, Great Northern beans, hard-boiled eggs, shredded or chopped chicken, chopped steak. 
*Tuna: I use Safe Catch wild yellowfin tuna.
*Mayonnaise: Chosen mayonnaise made with avocado oil, or Best Foods mayonnaise
*Green Goddess Dressing: I buy this from Trader Joe’s in the refrigerated produce section. 
*Unless I have leftover carrots from another recipe, I buy pre-shredded carrots. Makes it easier to quickly toss it into a bowl or wrap.
*Preparation: If you don’t feel like going through the steps of this recipe, toss all of the ingredients in a bowl, and stir.  I often do this when time is limited, and it still tastes great!
