Arugula Salad with Parmesan and Lemon Vinaigrette Dressing
This simple Arugula Salad with Parmesan and Lemon Vinaigrette Dressing is fresh, zesty, and ready in minutes! Ingredients
Salad
- 5-6 oz. Baby arugula (about 4 cups)
- ¼ cup Shaved or grated Parmesan
Optional Salad Ingredients
- ¼ cup Toasted almonds, walnuts, or pine nuts optional
- Thinly sliced red onion or cherry tomatoes optional
Lemon Vinaigrette
- 3 Tbsp Extra-virgin olive oil
- 1 Tbsp Fresh squeezed lemon juice or to taste
- ½ tsp Dijon mustard
- ½ tsp honey or maple syrup
- salt and pepper to taste
Instructions
