Ingredients
  

Salad

  • 5-6 oz. Baby arugula (about 4 cups)
  • ¼ cup Shaved or grated Parmesan

Optional Salad Ingredients

  • ¼ cup Toasted almonds, walnuts, or pine nuts optional
  • Thinly sliced red onion or cherry tomatoes optional

Lemon Vinaigrette

  • 3 Tbsp Extra-virgin olive oil
  • 1 Tbsp Fresh squeezed lemon juice or to taste
  • ½ tsp Dijon mustard
  • ½ tsp honey or maple syrup
  • salt and pepper to taste

Instructions
 

  • In a small bowl or jar, whisk together the vinaigrette ingredients until well combined.
